Breakfast is hard.  I am not sure why… scrambled eggs without salt is sad, and onion/garlic powder makes them overly savory for in the morning. Then removing the fat makes them stick to the pan. It’s a frustrating mess.

This sandwich ups the ante with a healthy fried egg cooked just over medium. Avocado adds omega 3 and 9 fats, and a rich creaminess that is almost as good as cheesy eggs.  Then a flavor boost with just a dash of sriracha.  Do not be afraid to mix up your bread choices, I normally go with a low sodium Ezekiel bread, but an onion hamburger bun is excellent in a pinch.

This recipe is one of my favorite go-to breakfast.


  • 2 Eggs
  • 1/4 tsp Onion Powder
  • 1/2 Avocado
  • Sriracha
  • Hamburger Bun
  1. Spray non-stick pan cooking spray and add to whole unbeaten eggs to the pan. Cook until whites are hard and the yoke has started to solidify. Then add black pepper and onion powder to taste.
  2. Toast the bun. Add cooked eggs, avocado, and sriracha.
  3. Grab a napkin and dig in. (This sandwich is amazing, but kind of drippy.)
